May 3, 2021Welcome to Belly Bakes! It’s a little series I’m doing on here and over on Instagram to showcase my bakes in line with how big Baby Stock #3 is!
No, don’t worry, you haven’t missed weeks 4 (because that’s when I found out I was pregnant) to 18. I’ve only just started this because I’ve started to feel better and my food aversion has lessened.
I may not always do a bake each week either. Sometimes it is difficult to find out how big it is in accordance with fruit (or some fruits I have never even heard of!) so I’ll just leave those out.
Anyway…onto this week’s bake…
Mango & Coconut Anzac Cookies
Anzac Cookies have to be one of my favourite biscuits – think hob nobs but far chewier and less crumbly. Just YUM! I have adapted this recipe, which is great but these have just added a more tropical twist. Check that post because I have added the baking tips that you may need to read before you embark on this bake!
Ingredients
- 130g butter
- 40g golden syrup
- 30ml water
- 1/2 tsp bicarbonate of soda
- 135g plain flour
- 50g desiccated coconut
- 25g sultanas
- 40g dried mango pieces
- 85g brown sugar
- 135g caster sugar
- 110g oats
- 1/2 tsp salt (I use Maldon sea salt)
Method
- Pre heat the oven to 160 degrees Celsius and line a baking tray with baking paper
- Melt the butter, golden syrup and water together in a small pan
- Meanwhile, mix the dry ingredients together
- When melted, add the bicarbonate of soda to the warm butter mixture and stir – it should froth slightly
- Add the frothy mixture to the dry ingredients and stir until fully incorporated
- . Take walnut sized amounts of the mixture and shape into round balls
- Place onto the lined baking tray, making sure that you are leaving space for them to spread
- Bake in the oven for 12-15 minutes or until they look golden brown and have cracks on the surface
Mango baby
At week 19 the little baby inside me is apparently the size of a mango. Obviously this is on average but according to The Bump, Baby Stock is roughly 6 inches long and 8.5 ounces in weight. Doesn’t seem a huge amount but this week I have started to feel him/her kick which is very exciting!
