May 10, 2021I have previously posted an epic banana bread recipe which you can view here, but my four year old son, Rufus, wanted to bake “Bro-nana bread” for week 20 of Belly Bakes inspired by his favourite film “The Croods 2”.
It’s a bit of a different recipe which uses yoghurt to give a denser texture. It’s less of a bread/cake and more a type of pudding consistency so if that’s your bag then you’ll love it. I’ve also sneaked a bit more fruit into the recipe which helps when you’re feeding small children! I’ll be honest, I probably won’t make this version again because I like a fluffy texture, however Rufus absolutely wolfed it down and it was great in slices for his lunchbox.
Bro-nana Bread
Ingredients
- 300g self raising flour
- 150g plain flour
- 1 tsp ground ginger
- 2 tsp ground cinnamon
- 110g caster sugar
- 2 ripe bananas
- 1 apple
- 2 eggs
- 125g melted butter
- 250ml yoghurt
- 250ml milk
- 45g rolled oats
- 2 tbsp demerara sugar (optional)
Method
- Preheat the oven to 180C
- Mix all the dry ingredients together and set aside
- In a separate bowl, mash the ripe bananas and grate in the apple
- Add the eggs and mix
- Add the wet mixture to the dry ingredients and fold together
- Add in the melted butter, yoghurt and the milk and mix – try not to overmix at this stage because you will get a heavy cake!
- Add the mixture to the lined cake tin – we used a square 20x20cm brownie tin
- Sprinkle the top with the oats and 2 tbsps of demerara sugar
- Bake for 45-50 minutes or until the top is golden
Baking tips
- This recipe could easily be adapted to make it gluten free – swap the flours for the same amount of gluten free versions. I prefer using just plain flour because the self raising versions seem to have rice flour added which I cannot stand the texture of! If you’re doing this and leaving out the self raising gluten free flour, then ensure you are adding in 1 tsp of baking powder
- This will bake for longer than you realise – do not be tempted to open the oven door and check until at least 40 minutes have passed!
- To check whether the cake is cooked, insert a skewer into the top – if it comes out clean then the cake is ready to take out
- It would be lovely with the addition of sultanas too – but I put sultanas in everything if I get the chance!
Banana baby!
At week 20, Baby Stock is the size of an average banana. According to The Bump, he/she is roughly 6.5 inches long and 10.2 ounces in weight. Last week I started to feel them kick but still not got a bump…I’m getting bump envy! And no, we’re not finding out the gender! It’s a surprise!
